Hubby's Favourite Biscuits

Biscuit Recipe


Hello everyone - here is the biscuit recipe as promised on Instagram earlier today. 

This is one of my family's favourite - make these biscuits and they will love you forever!  The recipe is super easy and you don't need to worry about expensive ingredients.  I happily use supermarket value range for all the ingredients - the trick is to MAKE SURE YOU USE BUTTER.  Margarine is no good for this recipe, the biscuits will just taste greasy.  As long as you use butter you can use cheap ingredients for the rest of it.


Ingredients
8oz/225g sugar
4oz/125g golden syrup
4oz/125g butter
12oz/325g self-raising flour
2 teaspoons ginger (optional)
1 level teaspoon bicarbonate of soda
1 beaten egg


Put the sugar, syrup and butter in a large pan and melt over a very low heat. I have a regular ceramic hob oven and usually put the hob on 2.  The heat needs to be low otherwise you'll burn the sugar.



While that's melting, in a large bowl put the flour, bicarb of soda and ginger.  You can leave out the ginger if you want - my family prefer it with ginger.



When the pan ingredients have melted thoroughly add them to the bowl of dry ingredients along with the beaten egg.  Mix it thoroughly and you will get a soft dough.



Put small teaspoons of the mixture onto baking trays (using baking parchment) and make sure you space them out well because as the biscuits cook they will spread out so you needn't be fussy about shaping the mixture into balls.



Put in the oven on 190C/375F for 10 minutes.



THE TRICK TO PERFECT BISCUITS IS TO TAKE THEM OUT JUST BEFORE THEY ARE COMPLETELY COOKED WHILE THEY ARE STILL SLIGHTLY 'FLOPPY.'



You want them cooked but not overcooked because as they cool down they will start to harden. You want to be able to bite into them and have a slightly soft chewy middle.  Obviously if you like hard biscuits cook them well, but my family like them with that chewy floppy texture - the best being straight from the oven while they are still warm!

Don't forget that as your oven is on for a while the cooking time will slightly decrease due to the accumulated heat.

Getting the biscuits out at the 'right' time is a bit of a knack but after you've made them a couple of times you will get to know when they're ready.


Another tip is that they are eaten so quickly I actually times the recipe by 3 so I have a fighting chance of some still being in the tin 2 days later!
